A Cooling Tart…
After having to get up at 4 a.m. for an early morning shift (inventory at Athleta) and surfing after I needed a little pick-me-up…so I made this delicious/raw lime and avocado tart. YUM!!!
Ingredients:
Crust: 1 cup almond flour + 3/4 cup pitted dates
Combine ingredients in blender and then distribute the crust evenly on the bottom of a pie pan using your fingers
Filling:
2 medium/large avocados
6 tablespoons honey
1/2 cup lime juice
5 tablespoons melted coconut oil
1/2 cup shredded coconut
Blend all ingredients and spoon on top of the crust. After place in fridge or freezer till the filling has become firm.
With the cooling taste of lime and the airiness from the avocados, it is perfect for the 85 degree weather right now in L.A!
